Pizza (Use same dough for Breadsticks or Calzones) Makes 4 large pizzas
8 cups flour
4 tsp salt
1/4 cups sugar
4 cups hot water
3/4 cups olive oil
4 Tbs yeast

Measure yeast into a small bowl. Sprinkle with a bit of the sugar and add up to half of the warm water to activate the yeast. Measure flour, salt and sugar into a large mixing bowl. (I use a Bosch mixer) Add the rest of the water, yeast and olive oil. Mix. Add additional flour as needed. The dough should cling to the center and clean off the sides of the bowl as it mixes. Knead in mixer about 5 minutes. Let rise in bowl. Stir down and divide into 4. Cooking spray 4 large 15 1/2" to 16" pizza pans. Roll out dough in pan pushing dough from the center outward to the edges of the pan. Let rise in pan. Add tomato sauce / mozzarella cheese and toppings and bake at 425ยบ for 15-20 minutes or until bottom of crust is golden brown. This recipe can easily be halved r quartered for fewer pizzas.*If you use instant yeast stir it in dry with the flour, salt and sugar.
